Thai Jellyfish Satay

Cucumber Salad Recipe:  Mix in a bowl:  Sliced seeded peeled cucumber, sliced carrot, minced ginger, sliced green onion, mung bean sprouts, sea salt, a dash of sesame oil, a small squeeze of fresh lime juice, a little bit of  sugar, a splash of rice vinegar, white pepper and a pinch of five spice powder.
     Center a wide strip of the cucumber salad across the plate so it forms a bed for the skewers.
     Anchovy Seaweed Salad Recipe:  Mix cooked seaweed pieces, cooked dried anchovies, a little bit of minced garlic, a few drops of sesame oil, sea salt and white pepper together.  Set the seaweed salad on one side of the plate.
     Chilled Noodle Recipe:  Mix chilled cooked rice vermicelli noodles, a few drops of sesame oil, sea salt, white pepper, a little bit of Korean Red Serrano Chili sauce, a small squeeze of fresh lime juice, a few thin julienne snow peas, a little bit of minced ginger and a little bit of sliced scallion.  Set the chili lime noodles on the other side of the plate.
     Lay a couple chili oil packed lotus root slices on one end of the plate.  (Available at a Chinese market.)
     Put two dollops of Thai peanut sauce on the other end of the plate.  (Bottled Thai Peanut Sauce is fine for this recipe.)
     Satay Marinade:  Mix a little bit each of these ingredients:  turmeric, yellow curry powder, sugar, soy sauce, corn starch, sea salt, white pepper, a splash of water and a few drops of sesame oil.
    Soak some very thin sliced reconstituted jellyfish strips in this mix.  (Simply soak dried edible jellyfish in water to reconstitute.)
    Use bamboo skewers to sparingly thread and wrap the jellyfish strips.  Grill the skewers till the jellyfish gets a slight caramel color around the edges.  Set the skewers on the cucumber salad.
     This is a very tasty dish!  The jellyfish have a very mild flavor on their own with a strong iodine flavor.  Jellyfish satay is a whole new dimension of flavor!
     I pictured a minimal portion on these strong flavored jellyfish skewers.  It is best to start small with a strong flavor like jellyfish.  In Thailand, jellyfish satay is made with much larger pieces of jellyfish.  Jellyfish are a healthy, anti cancer, anti high blood pressure and anti thyroid disorder food.  Its very high in Iodine like kelp.  The iodine jellyfish flavor with this curry spice satay is a very nice combination.  I really like this light plate of food!  ...  Shawna
